Cobb Salad from Smitten Kitchen

I love a good salad and with the summer heat arriving I need to add to my list of wonderful salads. Smitten Kitchen recently posted about a Cobb Salad and immediately I wanted one! I bought the ingredients the next time I went to the commissary.
Instead of piling it all on one plate, I put the ingredients in separate storage containers. I knew this would make it easier for me to put leftovers away and have a yummy salad for lunch the next day!
I still made the kids try a little of everything but the next day I let them choose what they wanted. Good. More blue cheese for me!!!
The lettuce is a head of iceberg and a head of romaine. I made it big so we could have it for lunch the next day also.
I especially love the BACON!!! I buy thick cut and cook it in the oven.
My 2nd favorite is the avocado. Oh the creaminess.
I forgot to take a picture of the dressing. I did make the one that Smitten Kitchen recommended and it was delicious. I didn’t need to use very much on my salad to cover everything and the avocado and blue cheese are like a dressing of their own. Love the flavors!
Classic Cobb Salad
Adapted, barely, from Smitten Kitchen
Serves our family for dinner and lunch.
Dressing:
3/4 cup canola oil
1/4 cup extra-virgin olive oil
1/4 cup red wine vinegar
1 tablespoon fresh lemon juice
3/4 teaspoon dry mustard
1/2 teaspoon Worcestershire
1/4 teaspoon sugar
1 clove garlic, minced
Kosher salt and freshly ground black pepper, to taste
Blend all together. Don’t use too much!
Salad
1 head iceberg lettuce, cored and shredded
1 head romaine lettuce, chopped
1 container blue cheese, crumbled
1 pkg bacon, cooked, roughly chopped
6 hard-boiled eggs, peeled and chopped
2 medium tomatoes, chopped
2 boneless skinless chicken breast, cooked and chopped
3 avocado, cut in half, remove pits, score avocado, remove with spoon

Oh, this looks wonderful! After my 3rd baby was born last June, the hospital had a ton of “meat and taters”type choices for me to eat (blech- it was hot! And I’d just had a baby!) But they offered a Cobb salad one day and it tasted so delicious… perhaps because I’d been deprived of blue cheese for almost 9 months.
