One Skillet Chicken and Dumplings

I found the Eating Small Potatoes blog through a Food Blog contest that someone else had mentioned. I had gone to the site to vote for the blog (of whom I cannot remember now) and spent some time looking at the other contestants. I came away with this recipe! It’s delicious. We’ve had it twice now and it is definitely a keeper in our house.

I followed the recipe pretty much exactly, except that if I use my stainless steel pan I don’t use butter to cook my chicken. And I let my onions cook a lot longer. Even more brown than what you see here.

Here is after it has thickened some and I’ve added the carrots and chicken.

These pictures are probably self-explanatory. I don’t know why I feel the need to explain everything to you! (This is Sam mixing up the dough!)

Just keep going until you’ve used all the dough. By the time she was done the whole top was filled in.

Then put the lid on again and let those dumplings cook. It is well worth the wait!

Two things I learned.

1. Use a deeper or wider pan. I keep forgetting and just used my 10″ skillet and the lid barely fits on top once the dumplings are in.

2. Since you do use another bowl (if heating the liquid in the microwave) or another pan to the heating, I don’t really consider it a ONE Skillet recipe but it’s close enough.
