Black Bean and Corn Salad

3 cans sweet corn
2 cans black beans, drained and rinsed
1 med purple onion, finely chopped
1 T. cilantro, chopped
Dressing:
1/4 c sour cream
2 T red wine vinegar
1/2 c mayo
1 T. cumin
1 T. chili powder
Mix all together. I don’t even measure the ingredients for the dressings, I just dump and mix. Turns out great every time. Perfect with chips and cut up avocado!
