Tex-Mex Pasta

I got this recipe from Woman’s Day magazine eons ago. Wish I could read the date on the copy of the magazine page I have stuck in my recipe binder! I did adapt the recipe over time – I mean really – 12 oz of pasta? Just use the whole box!!

I don’t know why it’s called Tex-Mex Pasta. OH. Because the original used jalapenos and cilantro and I guess that makes it Tex-Mexicaney? Even though it’s definitely my own recipe now we still call it Tex-Mex Pasta. The name stuck.

This is just barely enough for 7 of us, if we’re serving a salad or something else also. Otherwise I double it and then we have leftovers.

Ingredients:
16 oz pasta (The original recipe called for wagon wheel pasta but I never see those so I usually use bow tie – farfalle.)
1 pkg beef kielbasa
1 can corn
1 can creamed corn
favorite salsa (I just use Pace Picante, but after it’s gone through the blender.)
10 oz blog Monterey Jack cheese, shredded
sour cream
avocados

Cook the pasta.

After cutting the kielbasa into bite-sized pieces, fry them up!

After the pasta is finished, add and mix together the pasta, kielbasa, both corns, a blob of salsa (depends on how hot you like it), and the cheese. Mix until cheese is melted.

Serve with sour cream and cut up avocados. Sorry the pictures isn’t real clear. We were HUNGRY!!!

Easy recipe. The kids love it. Roy and I love it. Hope you love it too.

    Just copied this off. I typed “from Melissa, Marine’s Wife” because I like to remember where I got recipes.
    We love avocados and I’m excited to have another recipe to use them in.

    I copied and pasted this into Word, printed it and am putting it in my recipe book. I think I’ll make this for church fellowship meal on Sunday. Thanks for sharing. It sounds yummy and super easy — that’s a grea combination. :-)
