Macaroni and Cheese

There are so many ways to make macaroni and cheese. Each family’s homemade mac n cheese is “THE BEST.” Right? Right? I’ve made quite a few different versions, and definitely some have been keepers. This particular recipe is by far our favorite. The kids ask for it all the time! It’s adapted from Deceptively Delicious: Simple Secrets to Get Your Kids Eating Good Food.
Melissa’s Macaroni and Cheese
1 box pasta, cooked
1 sm. head cauliflower, steamed
2 T butter
2 T flour
2 cups heavy cream
1/2 block cream cheese
2 handfuls sharp cheddar cheese
paprika
garlic salt
Steam the cauliflower until tender, then puree in a food processor.
After the pasta is cooked, melt the butter, then add the flour and whisk in for a minute. Slowly add the cream, continuing to whisk to keep the mixture slightly thick. Once all whisked in, add the cream cheese, cheddar cheese, and pureed cauliflower. Add a few shakes of garlic salt and a few more shakes of paprika. Stir until all melted together. These are definitely to your own taste!
Add the cooked pasta and stir gently. Serve.
I usually double this recipe because we love it so much! When I double it, I pretty much double what is listed, except I use a larger head of cauliflower along with 2 or 3 small summer squash, and I don’t double the cream – I just go by how it looks. Sometimes I add bacon!! It’s delicious. Let me know if you try it.
